Independent restaurant operators · Consulting, permitting, real estate and systems

Consulting · Permit expediting · Real estate · Systems Georgia

Local Restaurant Group opens and operates independent restaurants in Georgia. We have worked across full service, fast casual, events and mobile, and restored older buildings to house them. We bring that to other operators’ projects — a first concept, an additional location, a build-out that needs walking through permitting, or an operation that has outgrown the way it is being run.

Between us we have also owned and run franchise locations. Whatever format you are working in, one of us has run it.

Services

Most people come to us with one problem and find it is attached to three others. We can take a single piece or the whole arc — a concept on paper, a lease, a permit set, an opening, and the systems that keep it running afterwards.

01

Consulting

First-time owners, operators adding a location, and restaurants that are open but not working. Concept development, menu and cost structure, opening plans, and the operating systems a restaurant needs once the opening is over.

02

Permit Expediting

We walk a build-out through city planning, health, and fire. We have done it for our own projects in several jurisdictions and know where the delays come from, which questions get asked, and what a set of plans needs to contain before it goes in.

03

Real Estate

Chris Collin is a licensed Georgia REALTOR® and handles the property side — site selection, lease and purchase negotiation, and reading a space for what it will actually cost to open in. We have signed leases as tenants and written them as landlords, so we can tell you which terms will cost you later.

04

Systems & Software

Inventory, cost control and reporting. We have worked across a wide range of restaurant software — point of sale, accounting, scheduling, payroll — and can help you choose it, implement it, and get the pieces talking to each other as part of an engagement.

05

Build-Out & Restoration

Three of our restaurants are in buildings that were not restaurants. Local Republic is a late-1800s structure on the Lawrenceville square that we took back to the brick and rebuilt across three floors. 235 N Perry Street was an old laundry in poor condition when we restored it. The LR Burger in Monroe was a 1940s service station. Older buildings carry problems that do not appear on a floor plan. If you are looking at one, we can tell you what it is likely hiding before you sign for it.

Our Restaurants

We still run our own restaurants every day. That is where the advice comes from.

Local Republic

Lawrenceville, Georgia · Since 2011

A southern gastropub and craft cocktail bar on the historic square, in a late-1800s building we took back to the brick and rebuilt across three floors.

LR Burger

Monroe & Duluth, Georgia

Smash burgers and hand-cut fries on a short menu built to run lean and repeat across locations. The Monroe location is a converted 1940s service station.

Sleigh on Perry

Lawrenceville, Georgia · Seasonal

A holiday pop-up bar that takes over the upstairs at Local Republic each winter — a full concept change in an existing footprint, built and struck in a season.

Booked for private events of 50 or fewer. Inquiries open soon.

Past Projects

Other concepts we have opened and run over the years.

The Georgia Pine
New American and locally sourced, at the Shoppes at Webb Gin — rabbit, trout, Georgia coast clams and flatbreads, with a craft bar alongside.
Managed for its owner
Laundry Events
A full-service events venue in downtown Lawrenceville, hosting corporate and community events. Sleigh on Perry started here before moving to the upstairs bar at Local Republic.
2018–2024
Taco Concept
A deliberately unauthentic taco bar, built for range — duck, fried clams, fried green tomato, lamb.

High Voltage Wings
Our take on a neighborhood bar — wings, nachos, burgers, fish and chips — sharing a building and a kitchen with the taco concept. Doc Brown from Back to the Future was the mascot.

Two pizza franchise locations, owned and operated by Chris.

An extension of the taco concept, on the road.

Who We Are

Local Restaurant Group is Ben Bailey and Chris Collin — operations and systems on one side, property and development on the other — and a small team that keeps all of it running.

Chris Collin and Ben Bailey

Chris Collin

Partner · Real Estate & Development

Chris learned the business from the supply side, spending several years at Sysco working with owners on menus and margins before opening anything himself. He opened and ran two pizza franchises, working the line himself most nights, then partnered with Ben to open Local Republic. He is a licensed Georgia REALTOR® and handles site selection and negotiation, for the group and for clients. Outside of work it is family, the north Georgia mountains, and Italy when he can get there.

Ben Bailey

Partner · Operations & Systems

Ben went straight into the workforce out of high school — graphic design first, then twelve years in IT building enterprise systems for companies like Coca-Cola, Lockheed Martin and ING. Homebrewing turned into an interest in the business, and he and Chris opened Local Republic. He cooks, has worked every position in the house, and handles menu, recipe and cocktail development alongside the culinary teams at the restaurants. He brings the design and technology side to everyday problems, for our team and for clients. He plays drums, and the rest is family time.

The team

Nicole Harold

People & Payroll

Nicole runs the employee side of the business — hiring, payroll, benefits and compliance — plus whatever else needs an owner. Outside of it she bakes for Bruce & Sabby, a small-batch dog barkery named after her own two.
